Waits for ESPHome 2025.5.0 release

Proposed change

There are some significant BLE fixes in 2025.5.0 that make proxies usable for active connections with WiFi for a lot more devices that previously could not establish a GATT connection most of the time. Airtime contention is ~25% lower now, which should really help in setups with many BLE devices using the WiFi proxies.

• Improve BLE Connection Reliability by Enabling Software Coexistence esphome/esphome#8683
• Optimize bluetooth_proxy memory copy and reduce reallocs esphome/esphome#8723
• Fix ESP32 API Disconnects Caused by Concurrent Logger Writes esphome/esphome#8736
• Improve batching of BLE advertisements for better airtime efficiency esphome/esphome#8778 (this is ~29% CPU reduction on ESP side and ~27% HA side)
