subprojects: Prepare for release

ci: Move xcframework .modulemap inside a subdir

To avoid clashes when an app links with multiple static frameworks, each
with their own modulemap.

ci: Remove snapshot-tag.yml

Actually triggering ci.yml seems like a rabbit-hole. Leaving for later.
